CurryCups Empanadas

Ingredients

  • 5 empanada circles
  • 1 jar of CurryCups
  • Your choice of protein (chicken breast, tofu, paneer, or ground beef)
  • Cooking oil for frying
  • 1-1 ½ cups shredded mozzarella cheese

Directions

  1. Prepare the sauce according to Recipe 03 (omitting step 5).
  2. Add cheese to the simmering sauce and stir until well combined.
  3. Let the sauce cool.
  4. Spoon about 2 tablespoons of the cooled sauce onto each empanada circle.
  5. Fold the edges over and press with a fork to seal.
  6. Fry in hot oil until golden and crispy.

Chef's Tip

Chef prefers chicken or paneer for this recipe. Add cilantro to the sauce once it has cooled before filling the empanada circles. Freeze the empanadas for 1-2 hours before filling to avoid leaks. Serve with extra CurryCups for dipping.
